Mac n’ Cheese with Rosemary Breadcrumbs

This is the easiest, cheesiest mac n’ cheese out there. Instead of a traditional cream sauce, which is bland and complicated to make, this one packs a punch. Add some veggies or a salad on the side to feel less guilty.

One box of dried penne – cooked al dente
1 cup grated old cheddar cheese
1 cup grated Parmesan cheese
1/2 cup grated mozzarella cheese
2 cups 2% milk
2 Tbsp flour
1/4 cup breadcrumbs
1 tbsp fresh rosemary, chopped

– in a sauce pot on low heat add the milk and grated cheese until melted
– add flour and whisk vigorously to break apart any clumps
– once thickened mix with cooked pasta and transfer to a sprayed oven safe dish
– mix rosemary and breadcrumbs together and sprinkle on top of the pasta
– broil on high until the breadcrumbs crisp up and become golden
– serve hot
