Chicken and Veggie Soup

This soup has veggies, chicken and beans which will fill you up and keep you warm in these cold months!

1 white onion, chopped fine
2 garlic cloves, minced
2 red peppers, chopped medium
2 celery stalks, chopped medium
1 medium zucchini, chopped medium
2 carrots, peeled and chopped medium
1 can white canellini or kidney beans, drained and rinsed
2 cups cooked chicken, shredded
3 heaping cups, fresh spinach
1 can whole roma tomatoes
2 litres chicken stock
salt and pepper to taste
olive oil as needed

– in a large stockpot on medium heat, sautee onions and garlic until soft
– add peppers, celery, zucchini and carrots, cook until semi-soft
– add the can of tomatoes with all the juice and crush them open with a spoon in the pot (or squeeze them in your hand as you drop them in)
– add chicken stock and bring to a boil
– lower the heat to a simmer and add the beans, cooked chicken and spinach
– season with salt and pepper, to taste
– cook 10 minutes to heat the beans and chicken through
– serve hot
