Balsamic Roasted Chicken with Cherry Tomatoes and Mushrooms

This is a hearty dish that plays with sweet and tart flavours. Serving the chicken on top of smashed sweet potatoes brings out the sweetness in the balsamic.

Recipe:
whole chicken breast, trimmed
1 cup halved cherry tomatoes
1 cup sliced cremini mushrooms
1 cup fresh spinach
3 Tbsp balsamic vinegar
salt and pepper
baked sweet potato, smashed
olive oil as needed

Method:
– preheat the oven to 204C (400F)
– in a pan saute the tomatoes, mushrooms and spinach until the spinach wilts and the mushrooms are soft
– add the balsamic and let thicken slightly
– heat an ovenproof pan on high and add olive oil
– season the chicken well with salt and pepper
– add chicken to pan and sear until golden
– once seared, flip over and pour the balsamic sauce with the vegetables over the chicken
– place in oven and cook about 10 minutes
– once chicken is done, serve on a bed of smashed sweet potato
