PB and J (5-Minute) Oatmeal

Peanut butter and jam is a classic so why not have some PB and J inspired oatmeal that only takes 5 minutes to whip up!? Seems like a no-brainer to me.

Recipe:
1 cup water
1/2 cup quick oats
2 tbsp all natural peanut butter
1 tbsp dark chocolate chips (optional)
handful fresh berries
2 tsp cinnamon

Method:
– in a small sauce pot, bring water to a boil
– add oats, stir, cook uncovered 4 minutes
– while still hot, transfer to a serving bowl, top with peanut butter, chocolate chips, fruit and cinnamon
*Note: If you like your oatmeal more watery add more water, for more dry oatmeal use less water

Yield: serves 1

Cinnamon Apple Chips 

Keep the doctor away with these guilt-free munchies. Gluten-free, lactose-free and vegan it’s a win-win. 

Recipe:
3 medium size apples (use what you like; I used Ambrosia), washed and cored
cinnamon

Method:
– preheat oven to 93C (200F)
– wash and dry apples, leave the skin on
– using an apple corer, remove the core
– using a mandolin, slice the apples thin from top to bottom OR slice them thinly by hand
– line 3 large baking sheets with parchment paper
– lay the apples flat, do not overlap them
– sprinkle with cinnamon
– place in oven for 2 hours
– remove from oven and allow to cool
– to crisp them up more, separate the slices from the paper and leave on the tray to cool

Yield: 1 mason jar full, 2 baking sheets

Almond Cinnamon French Toast

French Toast is even better if it’s made with Baba’s Easter bread. That’s what I’ve used here, but you can obviously use whatever bread you like. Serve it with a fruit salad so you get that much needed morning vitamin boost!

Recipe:
For the egg batter:
one egg
2 Tbsp almond milk
1 tsp cinnamon
1 tsp almond extract
For the Toast:
3 thick slices of bread (your choice)

Method:
– whisk together all above ingredients
– dunk in bread and coat all sides with egg
– heat a pan on medium heat
– add butter and cook bread until golden
– garnish with cinnamon and maple syrup

Yield: 3 pieces of French Toast
